OUR CACAO
Origins, history, uses and benefits of ceremonial-grade cacao
WHAT IS CEREMONIAL CACAO?
Ceremonial cacao is cacao in its whole form.
It is created from cacao beans that are carefully fermented, dried, roasted and ground until they become a smooth, rich paste.
Unlike cocoa powder, the natural cacao butter remains inside. Nothing is separated from the bean, and no sugar, milk, preservatives or fillers are added.
This gives ceremonial cacao its full-bodied texture, naturally complex flavor and rich aroma.
It is not an instant chocolate drink, and it is not designed to taste sweet on its own. Pure cacao has depth. It can be earthy, bitter, fruity, nutty or subtly spiced, depending on its origin, variety and preparation.
It is an ingredient to experience slowly.
WHAT MAKES CACAO CEREMONIAL DIFFERENT ?
There is no universal certification or legally regulated definition for “ceremonial-grade cacao”.
The meaning comes from four essential qualities:
PURITY
Whole cacao with one clear ingredient. No added sugar. No dairy. No artificial flavors. No preservatives. No unnecessary fillers. Only 100% cacao.
ORIGIN
Cacao is inseparable from the place where it grows and the people who bring it to life. Understanding its origin, production and journey allows us to appreciate the final cup with greater respect.
CARE
The flavor and quality of cacao are shaped at every stage, from harvesting and fermentation to drying, roasting and grinding. These steps require knowledge, time and attention.
INTENTION
Intention exists both in how cacao is prepared and in how it is received. A cup can be part of a ceremony, but it can also become a personal ritual at home. What makes the moment meaningful is the care, presence and attention you bring to it.
For us, ceremonial cacao is not about following a perfect spiritual practice. It is about creating a conscious pause in your day and choosing how you want to enter it.
OUR CACAO. ORIGINS
Connection begins with presence.
SYNC Cacao was created to bring a meaningful ritual of presence into everyday life.
Behind every cup is a journey that begins thousands of kilometres away, in the tropical landscapes of Tabasco, Mexico, where cacao has been cultivated for centuries.
Made from 100% pure ceremonial-grade Criollo cacao, our cacao contains the whole cacao bean, preserving its naturally occurring cacao butter and everything that makes cacao so unique.
No sugar. No additives. No fillers. Just cacao, as nature intended.
WHERE OUR CACAO COMES FROM
The cacao used to create SYNC grows in the tropical state of Tabasco, Mexico, one of the world's historic homes of cacao cultivation.
Our cacao comes from family-owned cacao plantations in Cunduacán and from the historic Hacienda Cacaotera Jesús María, places where generations of farmers continue traditions that have been passed down for centuries.
Warm temperatures, abundant rainfall and rich fertile soils create ideal conditions for growing exceptional cacao. Each tree grows beneath the shade of larger tropical trees, allowing the pods to mature slowly before harvest.
Surrounding the cacao are native plants such as vanilla, cinnamon and many other tropical species that together create the unique ecosystem these trees depend on.
This is where every block of SYNC Cacao begins.
FROM TREE TO CUP
HARVEST
When the cacao pods reach maturity, they are carefully harvested by hand.
FERMENTATION
The beans are removed from the fruit and naturally fermented over several days.
This stage is one of the most important in developing the flavor and aroma of cacao.
DRYING
After fermentation, the beans are slowly dried under the sun until they reach the ideal moisture level.
ROASTING& GRINDING
The beans are gently roasted before being stone-ground into pure ceremonial cacao, keeping the naturally occurring cacao butter intact.
The result is rich, smooth and deeply flavorful cacao with nothing removed and nothing added.
WHY WE CHOSE CRIOLLO
Criollo is one of the rarest and most prized cacao varieties in the world.
Known for its delicate flavor, natural complexity and lower bitterness, it represents only a small percentage of global cacao production.
Its cultivation requires greater care and lower yields, making it highly valued among chocolate makers and ceremonial cacao producers.

A PLANT WITH THOUSANDS OF YEARS OF HISTORY
Long before chocolate became a sweet treat, cacao held deep cultural significance.
For thousands of years, Indigenous civilizations across Mesoamerica, including the Olmecs, Maya and Aztecs, cultivated cacao for ceremonies, celebrations, trade and daily life.
It was often prepared simply with water and spices, becoming a drink associated with community, gratitude and important life moments.
When cacao arrived in Europe, its preparation began to change. Sugar, milk and spices were introduced, eventually leading to the sweet chocolate products widely consumed today.
The contemporary cacao ceremony is not an exact recreation of one single ancient practice. It is a modern experience inspired by cacao’s long history of gathering, reflection and ritual.
At SYNC, we approach cacao with appreciation and humility.
We honour its origins without claiming ownership over traditions that are not ours. We use it as an invitation to become present, reflect with intention and create meaningful connection in the world we live in today.
BENEFITS OF PURE CACAO
Pure ceremonial cacao is naturally rich in plant compounds and essential minerals. While it's not intended to diagnose, treat or prevent disease, research suggests that many of cacao's naturally occurring compounds may support overall wellbeing as part of a balanced lifestyle.
RICH IN ANTIOXIDANTS
Cacao is one of the richest natural sources of flavanols, plant compounds that help protect cells from oxidative stress.
SUPPORTS HEALTHY CIRCULATION
Cacao flavanols have been studied for their role in supporting healthy blood flow and normal vascular function by helping the body produce nitric oxide.
NATURALLY NOURISHING
Pure cacao provides essential minerals including magnesium, iron, copper, potassium and manganese, all of which contribute to normal body functions such as energy metabolism, oxygen transport and nervous system function.
GENTLE, SUSTAINED ENERGY
Unlike coffee, cacao's primary natural stimulant is theobromine, which many people experience as a smoother, longer lasting source of energy with less intensity.
SUPPORTS FOCUS & MOOD
Cacao naturally contains compounds such as theobromine and small amounts of caffeine, along with amino acids like tryptophan, that may contribute to alertness and a positive mood when consumed as part of a balanced diet.
A NATURALLY SATISFYING WHOLE FOOD
Because ceremonial cacao contains the whole cacao bean, including its naturally occurring cacao butter, it has a rich, creamy texture and can be more satisfying than highly processed cocoa products.
SUPPORTS MOMENTS OF PRESENCE
For centuries, Indigenous communities in Mesoamerica have shared cacao during ceremonies, celebrations and important gatherings.
While "heart opening" is a traditional and symbolic expression rather than a medical claim, many people experience ceremonial cacao as supporting feelings of warmth, gratitude and connection, especially when enjoyed slowly as part of an intentional ritual.
OUR VALUES
We believe cacao deserves to be treated with respect.
That's why we work with producers who honour traditional cultivation methods and the people behind every harvest.
From the forests of Tabasco to your morning ritual, every cup is a reminder that meaningful moments often begin with something beautifully simple.
Connection begins with presence.
